I love chicken fingers. Really, I do! I got inspired this week by a recipe I found on the Net, which used walnuts and whole wheat flour to bread the fingers. I pretty much replicated what I remembered of that recipe, but it wasn’t what I would call a success. I think it still needs adjusting.
So I’m not even going to bother writing down the recipe for that one just yet. I will have to try them again real soon (my kids will be happy about that!) and make a few adjustments. A little less flour, a little more nuts, single dip, and cook them in a pan instead of in the oven.
The salad was really good however. It’s a simple salad mix with orange supremes, pomegranates and bean sprouts. I made a very simple dressing using the juice of the orange, a little bit of pomegranate juice, a teaspoon of Dijon mustard, about one tablespoon of olive oil and a dash of salt and pepper.
