We’ve been having the worst summer ever here, with constant rain and hardly any sunshine so this is the perfect comfort food to battle those summer blues we all seem to be having at the moment.     In between seasons. That is just the right term. Though I am still kind of clinging on this summer that, to be honest, was not summery at all. Still waiting for that hot VAVOOM that is hopefully not ending in a thunderstorm. Just once.

    I just made this as a side to quesadillas, substituting fresh tomatoes (because I needed to use them up) and shredded pepperjack cheese to give it a Mexican flavor. It was delicious. Cooking the corn in the oven made it so sweet and juicy and the lime juice gave it a twist that just made it pop. I’m going to try it again as written when I get another batch of corn.
