    This coleslaw sounds amazing!! (I don’t know where to comment anymore now that I’m following you on Facebook – haha!!) I think this might have to jump to the top of the “recipes from the healthy foodie that I want to try” list! I still have the chocolate cake, the mango chicken, the vanilla smoothie, etc. Oh and the passion fruit smoothie – which will also jump to the top of the list if you are able to find passion fruit (they might be out of season now) and come up with something!

    Both of those look absolutely delicious..! I had to laugh when reading about your burning your patties since you were so occupied in working on your photo setup..lol… How come that sounds so familiair? Just bookmarked both recipes!

    Mmm, looks tasty as always! I am also a coleslaw fanatic but the thought of the sickly sweet and fatty stuff you find and barbecues and family reunions makes me sick! One of my favorite ways to make it is simply with plain yogurt, a little touch of mayonnaise (easily left out to make it healthier, or make it homemade!), lots of fresh lemon juice+garlic, fresh thyme and salt and pepper. Sometimes a little dijon mustard. It is sooo fresh and delicious!

    I’m hesitant to put raw chicken through my food processor due to fears of contamination. Just strikes me as a bad idea.

    This coleslaw looks really delicious! I’ll for sure give it a try really soon. Now I do have one question; I’ve been to 3 different supermarkets in Québec city and so far, none had kale or had even heard of it! Does it have another name?? If not, where do you find yours? I’ve been seing a lot of recipes with kale lately and I really want to try them.

      Okay – so you’ll have to share your secrets for cracking the coconut and getting the meat out. I realized after I finally got it open (I put in the oven) that was only half the battle. This was by far the best coleslaw that I’ve ever had but it was from as easy as you implied – HAHA!! I still have to finish getting the meat away from the shell – I only got enough out to make the coleslaw. I think I used every knife/utensil in my kitchen..LOL!! Would love to hear your technique!!

      Well if this can be of any help Joann, my dad would just smash open the coconut with a hammer. Yes, my father was more of a mechanic than a cook but hey, he proved both can get along just well :)

    Marie – it’s so cute that you actually think I own a hammer! :) I guess I’ll have to stop at Home Depot and pick one up. But that still leaves the problem of getting the meat away from the shell.

    hehe sorry Joann, when I first met my husband, I owned more tools than him and I tend to asume every woman is like me…. :/ You better go with Sonia’s advice then! :)
    Also, I did try that coleslaw of yours Sonia and it is insane!! So so good. I thought I would have some leftover for my lunch tomorrow but nope, it’s all gone!
    Thanks again for yet another delicious recipe!
