I love this! I am convinced that more vegetables can be added to just about every single recipe ever to exist, and this is a perfect example. Do they still have a good meaty taste?

This will be concocted in my cuisine….stat!!! Question Sonia! What dimension of mini-pan do you suggest?…Did you use one of those silicone “pans” with six cavities?…These look scrumptious and moist…MUCH easier to do a “Whole 30″ without feeling any twinges of deprivation!

With a side salad, this is perfect…really.

These look adorable. I am always looking for food to take to work for lunches and seldom have any leftovers even if I make extras – the family just eat more. I should make a secret batch of these and freeze them.

I will never go back to my regular meat loaf recipe again. I used ground turkey and a pie plate so I could cut into 6 wedges. As I seldom have bread in the house, I liked just using eggs to bind – especially since my chicks are laying again! Thanks!

I found this while searching for recipes I can use during our elimination diet. The only thing in it we can’t have is eggs, so I just left them out. (I also added some rice.) It fell apart like nobody’s business, but it tasted amazing! Thanks for sharing!
