I won’t even bother writing much about it. It was a total fiasco. Pretty much tasteless, the macaroni was way overcooked, I can’t find anything positive to say about this dish… To my daughter, who will be reading those lines: Sorry Tasha, it has nothing to do with your cooking skills, it’s strictly to do with my failed recipe. You did a good job putting my ideas together. And sorry for buzzing around you so much! I know, I can be annoying sometimes! ;o)

One good thing might have come out of this failed dish, however. I really liked the idea of using low fat cottage cheese that had been blended to a very smooth and creamy consistency in a food processor. I’ll keep that in mind for next time. But use way less liquid. We used 4 cups total tonight, 2½ milk and 1½ water, which was WAY too much. When the dish hit the oven, it basically looked like soup! Still, it came out looking very good, so I sort of got my hopes all high. All for nothing.

So next time, I’ll try like 2 cups cottage cheese, 1 cup sharp cheddar and 1 cup milk. No flour. I wonder if buttermilk would work in this…

Also, I realised tonight that 1 cup breadcrumbs is equal to about 7 slices of bread. That’s a LOT. So definitely cut down on the crumbs…

And I still think this needs broccoli…
