This is one of my favorite things to have for lunch. I really wish there was an easy way I could make those at work. Egg white omelets are just so good for you, loaded with protein and extremely low in fat and calories, they are also very easy to make, providing you have access to a non-stick pan and a range to cook them on.

Basically all you need is half a cup of egg whites (or 4 egg whites if you use fresh), to which you lightly whisk in a pinch of salt, pepper and herbs of your choice. Fresh, dry, doesn’t really matter, use whatever you feel like. I really like dried basil in mine, which is strange in a way, because I don’t care much for basil in its dried form.

While you do that, preheat a large non-stick pan, coated with cooking spray for extra assurance, over medium heat. When the pan is hot enough, throw in your egg whites and cover if you can, but you don’t have to, really. In just a minute or two, your omelet is done. As soon as it turns opaque, fold or roll, whichever you prefer, transfer onto serving plate and you’re done! It’s as simple as that.

Of course, you can always add vegetables, cheese, nuts, whatever you feel like, to your omelet. They are such a versatile dish, really. I could eat them every day.
