Ratatouille in the making!
Ratatouille served on Spaghetti Squash with a little bit of Goat Cheese crumbled on top. And to think my daughter missed this. Oh, she will be soooo disappointed. (I’ll make another one soon, promise!)
Broccoli and Sharp Cheddar Soup! Topped with a few Walnuts. So easy to make, and so good for you too! One of my favorites. And that little Multigrain bun complements it absolutely perfectly.
Looks like this is turning into a daily food diary! I’m really liking this. Please bear with me as my equipment is pretty minimalist and my ligthing really sucks, but I am trying to make the best out of what I have. Tonight we had Chicken a la king served on toast. Yes, it’s possible to prepare this in a healthy… View Post
Darn, my camera’s battery died! I only had time to take 2 photos when my camera died on me. Plus, when it did, I had just realised I forgot to sprinkle the nuts on my pancake before to take my picture! Double darn! Oh well, this picture will have to do for now. I shall post a better pic when… View Post
I can’t decide which photo I like best. So let’s have ‘em both!
On the menu tonight: Chicken, Pear, Blue Cheese and Walnuts on Multigrain Bread, served with Spinach Salad. YUM!
I’m not big on squash. Or maybe I should say I’ve never been too big on squash, but I find it really grows on me. The more I eat the stuff, the more I like it. Tonight, I decided to try new varieties: Turban and Delicata. The dish turned out absolutely delicious. Although that Turban Squash is really tough to peel (it… View Post
Squash! That’s what’s for supper tonight…
Second batch was Apple, Cottage Cheese and Walnuts. I used half Buckwheat and Half Whole Wheat flour, which gives the bar a really subtle taste of Buckwheat. That was is a winner, nice and dense, just the way I like them.
I made two batches of mini protein breads today. The first one is Cranberry, Orange and Almonds. They turned out pretty great… Nice and fluffy that one!
Enoki mushrooms and other fresh vegetables (ok, ok, the baby corns aren’t fresh, I admit, but they’re hard to come across in the fresh form, you know…) All ready to go into that fried (without the fried part) rice.
Chicken Fried Rice! That’s what was on the menu tonight. Although, technically, it was not fried. I cooked it in a non-stick pan, using no more than a tablespoon of extra-virgin olive oil. So I wouldn’t call this “fried”. Also, there were far more vegetables than there was chicken in this dish, so I guess the name is all wrong…. View Post
Pizza Night! Here’s another one of my favorite foods to experiment with, especially the dough. Still looking for that perfect, chewy yet fluffy, airy and crispy whole grain pizza dough. This one has tomato sauce, spinach, mozzarella, blue cheese, walnuts and artichokes as toppings. All clean, all good! Now I need to start making my own tomato sauce! Want to… View Post
Salmon with zucchini carpaccio and parisian potatoes
For well over a month now, I have been reading Bake or Break, drooling over all the pictures, checking out the recipes, trying to decide which one I would choose as my monthly decadence. I finally decided on these bars. What a good choice I made. They are truly, absolutely decadent. Although I made mine even more decadent by adding a… View Post
I used to eat protein bars every day. While they are a good source of non meat protein and are very convenient for they are highly portable, they aren’t the best as far as nutrients are concerned. Not much freshness going on there!!! So I started looking for a cleaner option and found a recipe for “protein pancakes”. I have… View Post
