Tonight’s supper was supposed to involve eggs. I had planned on making omelets, wrap them in a tortilla and grill them somehow. But I just didn’t feel them. I didn’t have a clear vision in my mind, so I ended up making this salad instead.
I know, not even remotely close to the original plan, but I was really in the mood for strawberries and balsamic vinegar. So I grabbed a couple handfuls of spinach, added a bunch of bean sprouts, tossed in a dozen sliced strawberries and a diced avocado, mixed in a quick balsamic vinaigrette and topped with toasted pecans.
Hmmmm hmmmm good! That really hit the spot!
