What an amazing week-end I had.

U2 was nothing short of phenomenal. It was grand! It was spectacular. It was fantastic!

The kind of experience that you just can never forget.

I had never before in my life seen anything quite like it.

I mean, the stage, for starters, was HUGE! So big in fact that it wouldn’t fit in any of our local venues, so they had to build an entire stadium from scratch,  complete with seats and floor, to accomodate the tour. That alone was extremely impressive.

But the sight of so many people gathered in one place at the same time was just out of this world. We’re talking about 80 000 people per night. I had never before in my life seen that many people at once.

As for the concert itself: Oh my! Words are not enough. It was the paradise of light and sound. Simply perfect!

Something about the whole experience felt almost surreal.

Now between the two shows, I must’ve spent a total of a little over 20 hours standing on my feet. And I went to bed at 3am two nights in a row. That, for me, is very late!!! I usually get up not too long after that time… 😉

Needless to say I am pooped today, so much so I even skipped Yoga X this morning. I got up at 10, you know, and had to get going… I figured I had spent enough calories over the week-end, I could afford to take this little break. Especially since I haven’t been eating much all week-end. The food that you find at these kinds of events isn’t always the healtiest… Yet, you can be certain that it will ALWAYS be way overpriced.

Since I refuse to pay big money to put garbage in my body, well, let’s just say I didn’t eat much. At least, there was a little kiosque that sold fresh fruits, so I had some of that. $3 worth of green apples. That bought me 2 of them! Not so bad…

It would’ve been the perfect occasion to bring a few of these. but of course, they won’t allow it.

Pumpkin and Zucchini Breads

Plus, I like to travel light when I go to those kinds of events. I usually only carry a little waist bag and that’s it.

I think the breads would’ve ended up in crumbs had I tried to stuff them in there. And what a waste it would’ve been! Instead, I will be enjoying them as my afternoon snacks at work this week. That’s a much safer option for them! 😉

This is a recipe I adapted from Angela’s Oil Free Zucchini Walnut Raisin Loaf. I had some leftover canned pumpkin puree that I needed to use up and I thought it would go very well in this loaf.

I was right.

It worked perfectly well!

Pumpkin and Zucchini BreadINGREDIENTS
(Makes 6 individual loaves)
Slightly adapted from Oh She Glows

DRY

  • 2 cups spelt flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp four spice
  • 1/3 cup raisins
  • 1/3 cup chopped walnuts
  • 3 scoops vanilla protein powder

WET

  • 4 egg whites
  • 1-1/4 cup shredded skin on zucchini, packed
  • 1 tbsp lemon zest
  • 2 tsp fresh lemon juice
  • 1-1/4 cups buttermilk
  • 1 cup pumpkin puree

INSTRUCTIONS

  1. Preheat oven to 425F and coat individual loaf pans with cooking spray. You could also use a single loaf pan or muffin tins, you’ll only need to adjust cooking time accordingly
  2. In a large bowl, whisk the dry ingredients together
  3. In a separate large bowl, combine the wet ingredients, then add wet ingredients to dry and stir until just mixed. Be careful not to overmix the batter as spelt flour is delicate.
  4. Spoon the batter into loaf pans and put in the oven. After 5 minutes, lower heat to 375F and continue baking for about 25 minutes or until toothpick comes out clean.
  5. Cool on a rack for 5 minutes before unmolding then allow to cool completely on rack.
