Exploding with so much flavor but ready in mere minutes, this simple yet sophisticated Clams and Cherry Tomatoes Angel Hair Pasta dish is the perfect choice for your next quick and casual romantic dinner for two...

No need to slave for hours in the kitchen or leave your week’s pay check at the grocery store in order to come up with a more than decent romantic meal for two.

This Angel Hair pasta dish with Baby Clams and Cherry Tomatoes comes together in under 10 minutes, only requires a handful of ingredients, most of which you probably have on hand already, and is absolutely PERFECT for any “just-the-two-of-us” occasion, from the most romantic candle-light dinner complete with fancy wine and dessert to the totally casual evening dinner in front of the TV.

And in the event that there should be more than just the two of you? Well, you could always double the recipe…

Bring plenty of salted water to the boil and cook the pasta until it’s cooked to your liking.

While that is happening, heat a tablespoon or so of extra-virgin olive oil (or your favorite cooking oil) in a saute pan set over medium heat and add the shallot and garlic. Cook until slightly softened and fragrant, about 1 minute.

Add the diced tomatoes, chicken broth, white wine (or more broth), dried oregano, salt and black pepper; stir well and simmer until about half the liquid has evaporated, give or take 2 minutes.

Add the baby clams and continue to simmer for another minute or so…

…and then stir in the cream, if using. If you’d rather keep this dish entirely dairy free, feel free to simply omit the cream. However, know that even though it’s a really small amount, it does add a lot of richness to the overall flavor of the dish. So if you don’t mind dairy, I say you should definitely go ahead and throw it in!

Now kill the heat, throw in the cherry tomatoes and chopped parsley and stir once more.

As soon as they are cooked to your liking, fish the noodles out of the water with a large fork or a pair of kitchen tongs, let the excess water drip for a few seconds and drop them directly in the pan; toss delicately until well combined.

All that’s left to do now is garnish with a few more fresh cherry tomatoes and a bit of chopped parsley, as well as a few shavings of Parmesan cheese, if desired.

And voilà! You’re good and ready to eat! That didn’t take too long, did it?

  • 8 cherry tomatoes, cut in half
  • handful chopped parsley
  • few shavings parmesan cheese

Instructions

  • Bring plenty of salted water to the boil and cook the pasta until cooked to your liking.
  • While that is happening, heat a tablespoon of oil in a saute pan set over medium heat and add the shallot and garlic. Cook until slightly softened and fragrant, about 1 minute
  • Add the diced tomatoes, chicken stock, white wine, dried oregano, salt and black pepper; stir well and simmer until about half the liquid has evaporated, about 2 minutes.
  • Add the baby clams and continue to simmer for another minute, then stir in the cream, if using.
  • Kill the heat, throw in the cherry tomatoes and chopped parsley and stir.
  • As soon as the noodles are cooked, fish them out of the water with a large fork or kitchen tongs, let them drip for a few seconds and drop them directly in the pan; toss delicately until well combined, garnish with a little bit more fresh cherry tomatoes and chopped parsley, as well as a few shavings of Parmesan cheese, if desired, and serve without delay.
