Simply Elegant Arugula Salad
 
Ingredients
Salad
  • 2 cups fresh arugula leaves
  • 4-5 radicchio leaves, shredded
  • ½ avocado, diced
  • 25g walnuts, coarsely chopped
  • 10g fresh parmesan shavings
  • 1-2 chive sprigs, finely chopped
  • Chive flowers, to garnish
Vinaigrette
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp fermented garlic flowers (or 1 small garlic clove, finely crushed)
  • ¼ tsp salt
  • ¼ tsp black pepper
Instructions
  1. Add all the ingredients of the vinaigrette to a small mixing bowl and whisk until well combined and slighlty emulsified.
  2. Arrange the arugula leaves directly in your serving plate.
  3. Top with radicchio leaves, avocado pieces, walnuts, parmesan shavings and chives. Garnish with chive flowers, if available.
  4. Pour vinaigrette overtop and stir in when ready to serve.
