Creamy Broccoli Salad
Serves: Serves 4 to 6
  • 4 cups broccoli florets, chopped
  • 4 cups baby spinach leaves, chopped
  • 2 mini seedless cucumbers, diced
  • 1 of each yellow, orange and red sweet bell peppers, chopped
  • ½ red apple, julienned
  • ¼ cup raw pecans, chopped
  • ¼ cup organic raisins
  • ½ cup sliced green olives
  • ½ cup paleo mayo
  • ¼ cup balsamic vinegar
  • the juice of ½ a lemon
  • ¼ teaspoon Himalayan salt
  • ½ teaspoon freshly cracked black pepper
  1. Add all the ingredients to a large mixing bowl and stir delicately until well combined.
  2. Serve immediately or leave in the fridge for a few hours for flavors to meld.
  3. This salad will keep for a few days in the refrigerator in an airtight container. Although some wilting is to be expected, it still remains very tasty.
