Loaded Spinach Salad
Serves: 6 - 8
For the salad
  • 8-10 cups (300g | 10.6oz) fresh spinach leaves
  • 4 cups (375g | 13.2oz) sprouted beans
  • 1 cup (150g | 5.3oz) almonds, roasted*
  • 1 pint (227g | 8oz) white mushrooms, sliced
  • 1 red bell pepper, sliced
  • ½ cup (70g | 2.5oz) dried cranberries
For the vinaigrette
  1. Grab the largest mixing bowl you can find and in it, combine all the ingredients for the salad.
  2. Then, in a small bowl or measuring cup, vigorously whisk all the ingredients for the vinaigrette.
  3. When ready to serve, pour the salad over the vinaigrette and toss until well combined.
*To roast the almonds, simply place them in a 350°F oven for about 8-10 minutes; allow them to cool for about 15 minutes before adding them to the salad.
