I had a bunch of (not so anymore) fresh tomatoes that I needed to use quickly, some zucchinis and a load of cottage cheese that will expire at the end of the week. I didn’t have to think very long to come up with a plan… Vegetable Lasagna!
Alas, it looks like lasagna isn’t my forte! Again, I ended up with WAY too much water at the bottom of the pan. Must be all the fresh vegetables rendering their water. And, not only that, I find the taste was also way too tomatoey. I wouldn’t call this a success, although my daughter did say that it was very good, the only thing she didn’t appreciate was the fact that the onions were too big (did I ever mention she HATES onions? Yet, she LOVES onion soup… I’ll never get that one!)
I used 3 kinds of noodles, Spinach, Whole Wheat and plain white. Now THAT, I really liked.
Anyway, looks like I will have to try my hand at lasagna again, so still no recipe to share. Sorry…
