Breakfast for supper! I like that! So simple, quick and easy. A buckwheat pancake, stuffed with spinach and cottage cheese, topped with an egg, served with a bowl of home made porkless beans! OK, the beans are kinda loaded with molasses, i.e. sugar, so not THAT healthy, but still, not that bad either.All in all, a good vegetarian meal.
Can’t say I’m too happy with this picture. I find Quesadillas are very hard to make it so they look nice.They just look so boring just lying there in the plate. This is what was for supper tonight. Chickpeas made into a patty, served in a half pita with tahini/yogurt sauce, sweet potato french fries and brussel sprouts.
