Smoked Ham and Hard-Boiled Egg Salad

Ingredients

baby spinach leaves
chopped

large mushrooms
sliced

mini seedless cucumbers
chopped

ripe avocado
diced

5oz smoked ham, diced

hard-boiled eggs
coarsely chopped

sliced pitted kalamata olives
1/4
cup
paleo mayo
extra points if made with coconut oil!

preserved lemon
chopped (or 2 tablespoons lemon juice)

herbes de Provence

tsp
Himalayan salt

freshly cracked black pepper
Instructions
Add all the ingredients to a large mixing bowl and toss delicately until well combined.
Serve without delay.
