Ingredients
6.25ozangel hair pasta(or other long pasta of your choice)
Bring plenty of salted water to the boil and cook the pasta until cooked to your liking.
While that is happening, heat a tablespoon of oil in a saute pan set over medium heat and add the shallot and garlic. Cook until slightly softened and fragrant, about 1 minute
Add the diced tomatoes, chicken stock, white wine, dried oregano, salt and black pepper; stir well and simmer until about half the liquid has evaporated, about 2 minutes.
Add the baby clams and continue to simmer for another minute, then stir in the cream, if using.
Kill the heat, throw in the cherry tomatoes and chopped parsley and stir.
As soon as the noodles are cooked, fish them out of the water with a large fork or kitchen tongs, let them drip for a few seconds and drop them directly in the pan; toss delicately until well combined, garnish with a little bit more fresh cherry tomatoes and chopped parsley, as well as a few shavings of Parmesan cheese, if desired, and serve without delay.
