Ingredients

quartered artichoke hearts
drained

sliced hearts of palm
drained

roasted sweet pepper
chopped

lebanese cucumbers
finely diced

cloves
garlic

red onion
finely chopped

extra-virgin olive oil

juice and zest of 1/2 lemon

Add all the ingredients to a large bowl, toss to combine.
Serve immediately or place in the fridge for about an hour to allow flavors to meld.
This salad will keep for up to a couple of days in the refrigerator.
