Grilled Chicken Breast and Guilt Free Caesar Salad.
This salad was an experiment which turned out not too bad. I got the inspiration while watching “Eat, Shrink and Be Merry” a few weeks ago. While I really liked the idea of a healthy Caesar, I thought their version was still not quite clean enough. It did contain mayo, although low fat, and bacon, half sodium. Those are 2 ingredients that I figured could still be left out. So I did!
I won’t give you a recipe just yet, for the dressing was not quite as good as I’d hoped it to be. For one, there was too much lemon. Next time, I will leave the lemon juice out and only use the zest. But to at least give you an idea of how really guilt free that one is, I made the dressing with Cottage Cheese, Plain Yogurt, a bit of Buttermilk, an Egg White, lots of Garlic, Capers, Lemon Zest and Juice, about a teaspoon Anchovy Paste and a bit of Parmesan Cheese.
The croutons are nothing but a multigrain mini baguette, cut in half lengthwise and toasted, rubbed with garlic, drizzled with a little bit of olive oil and sprinkled with a dash of pepper and oregano, then cut into little squares. In place of bacon, I used a few Kalamata Olives.
All in all, it was very satisfying and was worthy of being called a Caesar. Even my son enjoyed it, and he is usually far from impressed with my “messing with good things”.
So next time I do this, I will measure, mark down and share the recipe, promise!
