Creamy Avocado Chicken Salad

450g poached chicken breasts, cooled and diced
200g red grapes, cut in halves
1 chayotte, diced (you can replace with 2 celery stalks)
1 avocado, diced
2 green onions
The seeds of 1 large pomegrenate
75g crushed Walnuts, toasted

150g Plain yogurt
2 tbsp Honey
2 tbsp Mustard
2 tbsp Balsamic Vinegar
1 tbsp Cider Vinegar
1 tsp dried Oregano
Salt, Pepper to taste

– In a large bowl, mix all the ingredients of the salad together
– In a seperate bowl, mix all the ingredients of the dressing together
– Add dressing to salad, blend well and serve on a bed of mixed greens or baby spinach
