This dish is so super easy to make, it’s perfect for a quick lunch or for those nights when you are cooking only for yourself. Of course, you can still make them for several people, it’s just as quick!

For one sandwich, you will need:

1 large, thick slice of bread (tonight, I chose whole wheat, flax and sesame),
4 Egg whites
75g Spinach
4 slices tomatoes
30g Low fat Swiss cheese, grated
Salt and pepper to taste

-Beat the egg whites lightly, add salt and pepper, pour in a non-stick pan and cook over medium heat for 2-3 minutes, until the omelette has set.
-In the meantime, toast your slice of bread in a toaster and put the spinach in the microwave on high heat for about one minute, just to soften them
-Fold the omelet and put over your toast, top with spinach, tomatoes and cheese
Broil for 2-3 minutes until the cheese is melted and golden.

Serve immediately.
