Chicken (un)Fried Rice
That’s what was on the menu tonight. Although, technically, it was not fried. I cooked it in a non-stick pan, using no more than a tablespoon of extra-virgin olive oil. So I wouldn’t call this “fried”. Also, there were far more vegetables than there was chicken in this dish, so I guess the name is all wrong. But, since that is what we are used to calling this kind of dish, let’s leave it at that. Besides, Vegetable and Chicken Pan Cooked Rice sounds weird… or does it? I’ll think of something!
