Nice, light, fresh, yum! After spending the day in the kitchen, this is what I was inspired to eat for supper. I had no one to cook for but myself tonight, so I went with something fairly simple. Mind you, most of what I cook is fairly simple…

Here’s what went into it:

One small tomato, diced
One quarter of a cucumber, diced
One quarter of a chayotte, julienned (I used the other quarter for decoration)
Half of an avocado, diced
One small beet, diced
About a cup chick peas (cooked and cooled)
One quarter of a cup of parsley, chopped
A handful of Iceberg lettuce, chopped

And for the dressing:
The juice of half a lemon
One clove of garlic, crushed
Half a teaspon of dijon mustard
Half a teaspoon of Olive Oil
Oregano, salt, pepper, hot chili flakes (to taste)

Mix everything together, put in bowl, take pictures, enjoy!
