Egg on Buckwheat Crêpe
Breakfast for supper! I like that! So simple, quick and easy. A buckwheat pancake, stuffed with spinach and cottage cheese, topped with an egg, served with a bowl of home made porkless beans!
OK, the beans are kinda loaded with molasses, i.e. sugar, so not THAT healthy, but still, not that bad either.All in all, a good vegetarian meal.
