Think you’re not a fan of rutabaga? Well, I’m afraid you’re gonna have to think that one again. Sorry to say, but I’ve got quite the set of news for you today! I’m telling you, just one taste of these Maple Glazed Oven Roasted Rutabaga will have you totally begging for more!

So much so, you’ll probably even prefer them to potatoes! Or well, at least like them just as much…

I honestly never thought that the flavors of maple and rutabaga would go so well together, but I swear, they’re like a match made in heaven, like a union that was meant to be, like something that the gods had planned from the very beginning of time! And the little tang brought forth by the hint of lime as well as the subtle little kick provided by the addition of chili pepper flakes totally seals that bond, for good.

Trust me, I think you’ll really want to experience it for yourself, seriously…

These guys, on top of being delicious, are super easy to make and won’t even have you dirty any dishes. Well, except for maybe a bowl and a fork. Oh, and an knife to peel the rutabagas and cut them into roughly 1″ chunks. Once that’s done, you want to spread the cubes direclty  onto a 18″ x 26″ baking sheet that’s been lined with parchment paper. The parchment paper will ensure that the rutabagas won’t stick, and that you don’t even need to clean the pan once all is said and done!

Next, combine all the ingredients required for the sauce, i.e. some melted ghee, maple syrup, lime juice, salt, pepper, cinnamon and chili pepper flakes, into a small mixing bowl and mix vigorously with a fork or whisk until well combined.

Pour that sauce directly over the rutabagas and toss the cubes around with a your fingers until all the pieces are evenly coated. Make sure that all the cubes are in a single layer and that there is plenty of room between them to allow air to circulate freely.

Now simply throw that pan into a preheated 400°F oven and bake for about 40 to 45 minutes. Make sure to toss the cubes of rutabaga around every 10 minutes or so, until they are fork tender and start to turn a beautiful golden brown and are nicely caramelized.

Once the rutabaga has reached the desired color and doneness, remove it from the oven and immediately hit it with a light sprinkle of salt. Let it cool for a few minutes and then serve, garnished with fresh chopped parsley and a little bit of extra ghee, if desired.

  • Peel the rutabagas and cut them into roughly 1" chunks and spread them in a single layer onto a 18" x 26" baking sheet that's been lined with parchment paper
