Again, I spent most of my day cooking for Christmas (pictures of all the nasties will come, eventually!) so I wasn’t really hungry for supper. Especially since today was “everything sweet” day, I pretty much overdosed on sugar. Let’s just say that all the stuff I made today is far from qualifying as healthy.

Supper, however, was pretty healthy. I used leftover barley risotto from yesterday and turned it into a soup. I added a little bit of chicken stock and a few pieces of bell peppers, that’s about it. The sandwich took longer to make than the soup. It was simple tomato sandwich on a Multigrain bagel, with about a teaspoon of low fat mayonnaise and a handful of mixed greens. 

Now I as sooo full. I ate too much. I hate that feeling.
