Tonight I tried another of Kevin’s recipes. Unfortunately, I think I really messed that one up. I must’ve misunderstood the lemon part, for I find the only thing you could taste, really, was lemon. My understanding was that the recipe says to use the juice and zest of one whole lemon. I felt it was too much, so I only used the juice of HALF a lemon, and even at that, it was WAY too much. Re-reading the recipe, I guess what Kevin meant is you need one lemon to hit the salad with a splash of juice when it’s done. You need not use the entire thing. D’oh!

Still, next time, I will omit the dill and lemon, and add mushrooms and toasted almonds instead.
