I recently happened to fall on a recipe for Oatmeal Protein Pancakes on the Net. I didn’t keep the link, but it was extremely easy to memorize, so I decided to give them a try this morning.

Well, I am sold. The texture is good and moist, with a little bit of a crunch coming from the oatmeal. The taste is really good too. I added some cinnamon to mine (I love cinnamon, so I tend to add it to just about anything I can!) and I think that really helped give a sense of sweetness to the pancakes.

It’s one of those meals that is hard to believe is so good for you really.

Here’s the (extremely easy) recipe:

  • ½ cup Rolled Oats
  • ½ cup 1% Cottage Cheese
  • ½ cup Egg Whites
  • ¼ tsp Baking Powder (optional)
  • ¼ tsp Cinnamon (optional)

Just mix all the ingredients together in a blender until nice and smooth (a Magic Bullet works wonders*) and cook in a preheated skillet coated with cooking spray for about 2 minutes per side.

Serve with loads of fresh fruits and a drizzle of honey

I chose to make only one big pancake, but you could easily make 2 smaller pancakes.

*I really owe my daughter an apology for ever criticizing her Magic Bullet when she first brought this into our home. Back then, I had told her that it was nothing but a waste of valuable space. Well, I guess I have to eat my words now, as I would be the one using it all the time, like several times a week…
