    I totally feel the same way ab peach skin!!!! I’ll eat it bc I love the peach flavor but I prefer nectarines :) these coconut pancakes look amazing! I want to jump through the screen and eat the whole stack!!! I need to try these, and pronto!

    Mmm, those look beautiful, especially with the almond crumble on top. I love peaches but I couldn’t stand the fuzz when I was younger. I don’t know what I did but I don’t mind it now. Actually I find if I wash them really well and rub them with my hands a lot of the fuzz falls off. I have a really hard time eating one straight from the tree though. Funny how that is because they are soooo good :)

    Sonia, thanks for the response — I thought I might have missed something in the directions (wouldn’t be the first time I did!!). I picked up coconut flour yesterday so I could give these a try, but I will definitely incorporate whole eggs because so much high-quality nutrition (and satiety) is from the yolk. Will let you know how they turn out! (I am also curious about trying other fruits. I LOVE peaches but really only eat them in season — although probably could use frozen peaches for this sauce). Have you tried any other fruit? Thanks again, your photos are really lovely and I am excited to try these!
