Apple Cinnamon Baked Oatmeal
Making oatmeal doesn’t come easier than this Apple Cinnamon Baked Oatmeal. Delicious warm or cold, it makes for a healthy and satisfying breakfast or snack!
I love me a good bowl of oatmeal in the morning, but I often don’t have the time, or the patience that it takes to make me some oatmeal from scratch.
Well, this Apple Cinnamon Baked Oatmeal is the perfect solution to that problem! For starters, it’s crazy easy to make… it only requires a few minutes of active prep time and then it takes care of cooking itself. No need to constantly stir and check on it while it’s cooking like its stove top version counterpart.
And, it’s just as delicious served warm or cold, so leftovers will be ready to eat in mere seconds. Even better, once completely chilled, this Baked Oatmeal can be cut in to bars, making it totally portable! Perfect for those mornings where you need to be out the door real quick or whenever you need a quick on-the-go snack.
Personally, I like to eat mine straight out of the fridge, topped with a little bit of plain Greek yogurt mixed with a scoop of whey powder, for some much needed added protein! To me, that’s the ultimate post-workout breakfast right there!
Start by preheating your oven to 350°F and then grease a 8″ square baking dish with a little bit of ghee or butter. Set aside.
Next, in a large mixing bowl bowl, combine some rolled oats, walnuts, raisins, baking powder, cinnamon, salt and nutmeg.
Mix all those ingredients until they are very well combined and then add the diced apple.
I used Golden Delicious but you could use any kind of sweet baking apple you prefer. Fuji, Gala, Honeycrisp or Empire are a few excellent choices that come to mind. Or even Granny Smith, although that one might be a tad on the tart side…
Mix again until the cubes of apple are well distributed and every piece is completely coated in spices. Set aside.
In a separate bowl, combine the milk, buttermilk, honey or maple syrup, eggs and vanilla extract. Mix vigorously with a whisk until well combined and pour right over the dry ingredients.
Note that you could very well use 2 cups your favorite non-dairy milk and not add the buttermilk at all, if you preferred to stay away from dairy. Almond milk would definitely be an excellent contender!
Give everything a good stir and transfer the mixture to the prepared baking dish.
Bake for 30-35 minutes, or until the top is nicely browned and the center appears completely set.
Let cool in the pan slightly before serving, or let chill completely if you want to cut your oatmeal into bars.
Serve warm or cold, garnished with a dollop of plain Greek yogurt, a few apple slices, fresh mint leaves and chopped walnuts, if desired.
Any leftovers will keep in the refrigerator in an airtight container for up to a week.

- 2-1/4 cups rolled oats
- 1/2 cup chopped walnuts
- 1/2 cup raisins
- 1 tsp baking powder
- 1 tbsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 2 large sweet apples, peeled, cored and finely diced (I used Golden Delicious)
Wet ingredients
- 1 cup whole milk, (or milk of choice)
- 1 cup buttermilk, (or milk of choice)
- 2 large eggs
- 1/4 cup unpasteurized honey, or pure maple syrup
- 1 tsp pure vanilla extract, storebought or homemade
Optional Garnish
- Plain Greek yogurt
- Apple slices
- Chopped walnuts
- Raisins
- Mint leaves

Never tried making baked oats. What’s the texture inside? Pretty dry or not?
Well, it is much dryer than the stove-top version, but I suppose if you wanted a creamier oatmeal, you could simply add more liquid to the mixture.
Now this is my fall flavors. Apples and cinnamon! Yum!!
Hi Sonia – do you think blueberries would work in this recipe? I have a container in the fridge just waiting to be used but wasn’t sure if they would make the final product too dry?
It would make for an entirely different product, but they would definitely work!
