Are you sometimes a bit tired of eating the same old eggs and toasts in the morning?

Well, here’s a very quick and easy twist for you that’ll allow you to turn the plain and ordinary into sheer elegance AND deliciousness! Indeed, these Smoked Salmon and Sharp Cheddar Croque-Madame, they come together in no time — in fact, they don’t take much longer to make than simple eggs and toasts and definitely take much less time than your classic bacon and eggs — yet they make for a crazy elegant, filling and nutritious breakfast, that’s suitable for just about any occasion, be it a romantic breakfast in bed or a more standard “before hitting the road to work” breakfast.

Oh, and they’re also very good at lunch, or even dinner too, you know… Just sayin’

If like me you’re a fan of smoked salmon, you will be all over these, guaranteed!

2 slices of toasted bread on a baking sheet, covered with sour cream and shredded cheese

Start by slightly toasting 2 slices of your favorite multigrain bread (like about half way through, maybe?) in a toaster and then place the slices on a baking sheet.

Spread about 2 tablespoons of sour cream over each slice of bread, sprinkle with ground black pepper and then top each slice with a handful of shredded cheddar cheese; place that in the oven under the broiler until the cheese is melted and starts to bubble, which won’t take much longer than a few minutes. Be sure to keep a close eye on things, you wouldn’t want to burn anything!

Meanwhile, heat the olive oil in a small non-stick skillet set over medium heat and cook the eggs to your liking – although sunny side up is strongly recommended: not only will your egg look much better sitting atop your Croque-Madame, but then you’ll be able to pop that shiny golden yolk and have it double as a luscious, creamy sauce!

Take the bread out of the oven as soon as the cheese is melted and place the toasts on a plate or cutting board.

Divide the smoked salmon (you could also use gravlax if you preferred that) between both toasts and top each one with an egg. Sprinkle with a little bit of fresh herbs, if desired, and serve without delay.

Now pop that yolk and watch it run down your Croque-Madame like it were creamy liquid gold…

Ingredients

  • 2 slices multigrain bread
  • 4 tbsp sour cream
  • 2 oz shredded sharp cheddar cheese
  • 1 tbsp extra-virgin olive oil
  • 2 large eggs
  • 4 oz smoked salmon
  • salt and pepper, to taste
  • fresh herbs to garnish

Instructions

  • Toast the bread slightly in a toaster and then place the slices on a baking sheet.
  • Spread half the sour cream over each slice of bread, sprinkle with black pepper and then top each slice with half the shredded cheddar cheese; place in the oven under the broiler until the cheese is melted and starts to bubble, not much longer than a few minutes. Be sure to keep a close eye on things!
  • Meanwhile, heat the olive oil in a small non-stick skillet set over medium heat and cook the eggs to your liking (sunny side up is strongly recommended)
  • Take the bread out of the oven as soon as the cheese is melted and place the toasts on a plate or cutting board. 
  • Divide the smoked salmon between both cheesy toasts and top each one with an egg. Sprinkle with a little bit of fresh herbs, if desired, and serve without delay.
