Sweet Potato Mini Breads
I used to eat protein bars every day. While they are a good source of non meat protein and are very convenient for they are highly portable, they aren’t the best as far as nutrients are concerned. Not much freshness going on there!!!
So I started looking for a cleaner option and found a recipe for “protein pancakes”. I have since experimented with it and continue to do so every week. The pancakes became muffins and eventually mini breads. Every Sunday I come up with a new flavour, so they never get boring. I find them sooooo good, I always look forward to my afternoon snack now.
This week’s flavour is Sweet Potatoes. I haven’t tasted them yet, not sure how they turned out tastewise, but lookwise, they are my greatest success so far!
