Lime, Ginger and Coconut Smoothie
If, like me, you have smoothies at one point or another of pretty much every day of your life, I guess you too are probably after new flavor combinations, just to change from the traditional chocolate, banana, strawberry or plain old vanilla.
Don’t get me wrong, I still like a little traditional, from time to time, but you know me and my LOOOOVE for unconventional!
Smoothies would be one place where I really like to go nuts and improvise. It’s just so easy to add a little bit of this and a little bit of that.
I usually tend to stick within more “normal” parameters, though, so I don’t share ALL of my creations with you. If I did, this site would be about nothing BUT smoothies.
Once in a while, though, I manage to come up with a flavor combo that’s just so good, I deem it worthy of sharing with the rest of the world.
It just wouldn’t be nice fair to keep it to myself.
Especially when someone out there is so eagerly waiting to get their hands on the recipe.
Right Joann?
You see, I can’t take all the credit for this one. It was Joann who inspired me once again during one of our conversations. Looks like she’s slowly turning into my “be all end all” source of inspiration for smoothies… well, as far as wacky and ingenious flavor combinations are concerned, anyway!
I’ll be honest, though, this one didn’t come to me easy. I had to make several attempts before I finally got the result that I was after. Every time I’d make it, there was always something missing. I mean, the taste was good and all, BUT… I don’t know. I just wouldn’t come together.
It was missing that little “je ne sais quoi”!
Then, one morning, I finally put my finger on it. AVOCADO! That’s precisely what it needed. It just made it nice and thick and creamy. It gave it the richness, the fullness that it was lacking.
This formula here has just the right amount of everything. It’s tangy, tart, creamy and sweet, and it’s got a little bit of a zing to it. The combination of the lime and ginger is so extremely refreshing, they make this smoothie absolutely perfect for the hot summer days to come.
In fact, I’m thinking I want to try and turn it into an ice cream. Oh yeah! Now wouldn’t that be something!
Now if you will please excuse me… I need to run upstairs and put that churner in the freezer!

Lime, Ginger and Coconut Smoothie
Ingredients
- ½ ripe avocado, diced
- 45 g fresh ginger, chopped (no need to peel it, really!)
- The juice and zest of 1 lime, make sure it's good and juicy
- ¼ cup fat free Greek yogurt
- ¼ cup pasteurized egg whites, optional
- 1 cup coconut milk or coconut water
- 3-4 tbsp vanilla flavored whey protein
- 1 tbsp flax seed meal
- 1-2 tbsp unsweetened shredded coconut
- 1 tsp date paste
- ½ tsp pure vanilla extract
Instructions
- Add all ingredients to your mini blender or food processor and process until smooth
- Transfer to serving glass and garnish with a little bit of unsweetened coconut, lime zest and a slice of lime
- Take a few beats to relax and appreciate life while you savor this glorious concoction.

Perfect timing!! I just got home today!! Of course I LOVE that there is also avocado in this smoothie! I will definitely be trying this tomorrow! I have all the ingredients!! And you can never post enough smoothie recipes!

Delicious!! I’m thinking passion fruit should be the next Joann-inspired smoothie flavor. I know not everyone cares for passion fruit but I hope you’re up for the challenge!
Passion fruit, eh? Hmmmm… not a fan of it, I must admit, but I find the “challenge” to be quite interesting! Creating something delicious using an ingredient that I don’t really care for as a base. Why not? I’ll definitely consider! 😀

I love this! I never would have thought to make a coconut smoothie (for some reason), it sounds delicious! I recently had an avocado milkshake at a vietnamese restaurant and it was good, but I think this sounds so much tastier! Thanks so much!

Drinking this right now!! Super good! I made a few modifications though. I like my smoothies cold so I added about 6 ice cubes and some almond milk. Also, I didn’t have date paste so I used some honey and a few drops of stevia. Thanks so much!!
YAY! So happy to hear. Super glad you like it Jaimee! I like the idea of using honey also, in fact, I’ve also used with honey in a few of my trial runs, and I really liked it. The ice cubes are a good idea too, but although I too, like my smoothies super cold, I tend not to use ice cubes because I find they tend to leave little “crystals”, which I don’t really care for, so I prefer to use frozen fruit instead. Next time, I’ll try freezing the avocado! 🙂
P.S. I don’t recommend using canned coconut milk. I was just figuring the caloric/fat content of this smoothie (after I drank the whole thing) and the coconut milk alone was 400 cal. !! Yikes! With 200% of the daily rec saturated fat content. I’ll modify that next time 🙂
OMG! No way! Maybe I should specify, NOT the canned variety! I meant the drinkable coconut milk. The canned stuff is SOOOOO incredibly high in fat and calorie dense. Good for you still, but not in such a great quantity! Oh my, now I feel sorry that you’ve ingested so many calories because of me. Wish I could work them out for you… 😉

I’ll be trying this for sure! I’ve been having smoothies every morning for breakfast because they’re so fast and easy but I think this one looks like the perfect afternoon snack for me. I LOVE avocado in smoothies, the texture is amazing so I know exactly what you mean. The flavors in this sound perfect, can’t wait to try it tomorrow 😀

Ginger avocado lime and coconut….that combination is mid-boggling isn’t it?! I have to say I have a pet peeve about smoothies with bits in it…but I can definitely picture myself having this without the dessicated coconut or falx seed!!

Thanks a bunch Amrita! Funny, I am the total opposite! I absolutely NEED to have chewable bits in my smoothies. I find them to be much more satisfying that way. Much like I like my orange juice with lots of pulp! 😉
But you are totally right, just lose the flaxseed meal and shredded coconut and you will get a super smooth smoothie! 🙂
Great looking drink. Plus, I’ve always loved the shape of those types of glasses.
Well being that I am Dairy Free, I will use a vanilla vegan protein powder and will use a coconut greek yogurt (by SO Delicious). Is it really safe to drink raw egg whites like that, tho? Hmmm.
I use pasteurized egg whites (the kind that comes in cartons). Those are safe to use raw. I forgot to mention pasteurized in my list of ingredients again, didn’t I? Will have to go fix that…
And coconut Greek yogurt? Ooooooh… never heard of it. Definitely need to check this out!
Oh and I will use canned coconut milk or one by Silk or So Delicious in place of milk. (I NEED the extra calories, so may definitely use canned!).

This sounds like a dream of a smoothie. I’ve love smoothies, and been wanting
to venure out from frozen fruits more commonly used so far like stawberries, blackberries, blueberries, etc. and I love avocado, and even seeing it
used to make ice cream. Limes,coconut, ginger, dates, all being some of my
favorite foods together will be heaven to drink.

Made this today. Delicious. I figured with the strong flavors of lime and ginger and the creamy base of avocado and coconut milk, I could probably sneak in a little fresh lacinato (dinasour) kale as I’ve had that in coconut smoothies before. Sure enough 7 leaves (stems removed) went in beautifully and also gave it a nice green color without imparting kale falvor. Will be doing this again next time life gives me limes!
I think I must’ve been Thai in a past life; can never get enough of that coconut-lime combo! Made this for lunch (minus the date paste & whey powder which I didn’t have on hand), and added a frozen banana for a touch of sweet milk-shakiness.

Would you have any suggestions to replace the yogurt with a non-dairy item but in this and in other smoothies in which yogurt is prominent?

I’ve heard great things about coconut yogurt, although I’ve never tried it myself. Otherwise, you could probably go with something like a non-dairy cashew sour cream (you might want to pass on the green onions, though…)
