QUINOA WITH CHICK PEAS AND MIXED VEGETABLES I just love quinoa. This, I think, is the greatest new food discovery that I made this year. I find that, not only it tastes great, but it also looks great. The tiny little grains are just super cute and they seem to just pop in your mouth, almost like caviar. Now if only my kids could… View Post
“FATTOUSH” INSPIRED CHICK PEA SALAD Nice, light, fresh, yum! After spending the day in the kitchen, this is what I was inspired to eat for supper. I had no one to cook for but myself tonight, so I went with something fairly simple. Mind you, most of what I cook is fairly simple… Here’s what went into it: Ingredients One… View Post
This is one of my favorite post-workout drinks. When I’m all done and showered up and I get to relax, sit down in front of TV, watch one or two episodes of the Gilmore Girls with my daughter. Sooooo refreshing! It’s got fresh cranberries, raspberries, blackberries and blueberries (I use whatever berries I have on hand), a little bit of… View Post
The second batch I made was Zucchini / Beets. I am really happy with how they turned out. I should’ve taken a picture of the one I broke open (couldn’t resist any longer, I HAD to eat one!), they look just like Christmas inside. All the red and the green, plus the black from the raisins, it’s a thing of… View Post
Today has been a good day, I guess, for I spent the entire day cooking. The funny thing is I don’t have much to show for it. I don’t think you guys would like to see pictures of piles of beets waiting to be peeled or inside round getting ground. I did, however, make my usual batches of mini-breads. The… View Post
Pancakes for breakfast! I usually have cereal for breakfast. Day in, day out. Oh, not the store bought kind of stuff, of course, I make my own. I’ve been eating cereal every morning for the past, well, at least 10 months, and I just can’t seem to get bored with it. In fact, I look forward to my morning bowl… View Post
Ratatouille in the making!
Ratatouille served on Spaghetti Squash with a little bit of Goat Cheese crumbled on top. And to think my daughter missed this. Oh, she will be soooo disappointed. (I’ll make another one soon, promise!)
Broccoli and Sharp Cheddar Soup! Topped with a few Walnuts. So easy to make, and so good for you too! One of my favorites. And that little Multigrain bun complements it absolutely perfectly.
Looks like this is turning into a daily food diary! I’m really liking this. Please bear with me as my equipment is pretty minimalist and my ligthing really sucks, but I am trying to make the best out of what I have. Tonight we had Chicken a la king served on toast. Yes, it’s possible to prepare this in a healthy… View Post
Darn, my camera’s battery died! I only had time to take 2 photos when my camera died on me. Plus, when it did, I had just realised I forgot to sprinkle the nuts on my pancake before to take my picture! Double darn! Oh well, this picture will have to do for now. I shall post a better pic when… View Post
I can’t decide which photo I like best. So let’s have ‘em both!
On the menu tonight: Chicken, Pear, Blue Cheese and Walnuts on Multigrain Bread, served with Spinach Salad. YUM!
I’m not big on squash. Or maybe I should say I’ve never been too big on squash, but I find it really grows on me. The more I eat the stuff, the more I like it. Tonight, I decided to try new varieties: Turban and Delicata. The dish turned out absolutely delicious. Although that Turban Squash is really tough to peel (it… View Post
Squash! That’s what’s for supper tonight…
Second batch was Apple, Cottage Cheese and Walnuts. I used half Buckwheat and Half Whole Wheat flour, which gives the bar a really subtle taste of Buckwheat. That was is a winner, nice and dense, just the way I like them.
I made two batches of mini protein breads today. The first one is Cranberry, Orange and Almonds. They turned out pretty great… Nice and fluffy that one!
Enoki mushrooms and other fresh vegetables (ok, ok, the baby corns aren’t fresh, I admit, but they’re hard to come across in the fresh form, you know…) All ready to go into that fried (without the fried part) rice.
